
| Edamame pronounced ay-duh-MAH-may (edible soybean) sometimes sold as sweet beans in the U.S., is a complete protein source containing all essential amino acids, fiber, essential fatty acids, and isoflavones (found only in soy). The green beans are sweet tasting, similar to snow peas in flavor. Dried and salted, they have a delightful nutty flavor similar to peanuts. Very few farms in Texas produce Edamame so the fresh product is extremely rare. Occasionally you will find it in the grocery store but not locally grown and most times not fresh. Most often you will find the frozen product either whole beans or shelled. Time is crucial to this soybean as it must be picked and used within two days or it begins to loose its sweetness. We harvest the product and get it to market within 24 hours. Consumers are cautioned to par boil and freeze the beans the day they get them or use them right away. There is nothing wrong with freezing them if it is done quickly. Our family is still eating last seasons product today, though we are running out fast. Our traditional and preferred sales venue is straight off the farm and in local farmers markets. We hope to be present in the Dallas Farmers Market.
